Ba Bar Phở
There is a lot of five dollar phở in this town. It's cheap and it's mostly good. But honestly, five dollar phở is not what we want. We want fresh oxtail, eye of round and brisket from Painted Hills Farm. We want chickens raised in Washington. We want Muscovy duck leg confit. We want broth that cooks for days.
We want a ten dollar bowl of phở. Sure, it costs twice as much, but it tastes five times as good. It's what we want. And it's what we serve at Ba Bar.
Life is too short for five dollar phở.
